Optimisation of the rearing conditions for edible carp as a function of geosmin and methylisoborneol concentrations in the rearing and holding environment
The continued operation of carp pond farming in Germany – with its role as a supplier of valuable foodstuffs and a provider of a wide range of public benefits – is only possible if pond farmers are provided with sufficient opportunities to earn a living. This also includes ensuring good product quality in order to attract a broad range of buyers and achieve good selling prices. Due to inadequate rearing conditions, muddy flavour notes caused by the accumulation of geosmin and methylisoborneol may occur. To ensure the supply of carcasses with an absolutely pure flavour, free from any muddy notes, site-specific protocols for the efficient and gentle rearing of the fish are to be developed.
